
The history of sushi began in Southeast Asia as a method to preserve fish by fermenting it with salt and rice. It later spread to Japan in the 8th century, where the original form, called narezushi, involved a much longer fermentation process where the rice was typically discarded. In the 19th century, Hanaya Yohei created a fast-food version called hayazushi by adding rice vinegar to speed up fermentation and using fresh fish, which is the basis for modern nigiri sushi. Sushi became a global phenomenon in the 20th century, particularly in the US, through the creation of rolls like the California roll, which made it more accessible to a wider audience
