For dessert, my <a href=\"https:\/\/entertainingwithbeth.com\/easy-plum-crumble-recipe\/\" target=\"_blank\" rel=\"noopener\">Easy Plum Crumble Recipe<\/a> would be an excellent finish!<\/span><\/p>\n<p><span style=\"font-size: 14pt; color: #000000;\">Servings: 4<\/span><\/p>\n<p><span style=\"font-size: 14pt; color: #000000;\">INGREDIENTS<\/span><\/p>\n<p><span style=\"font-size: 14pt; color: #000000;\">FOR SALAD:<\/span><\/p>\n<p><span style=\"font-size: 14pt; color: #000000;\">1 lb (450g) of cooked shrimp, cut into bite sized pieces<\/span><br \/>\n<span style=\"font-size: 14pt; color: #000000;\">1\/2 cup (113g) cherry tomatoes, diced<\/span><br \/>\n<span style=\"font-size: 14pt; color: #000000;\">2 Tbsp (30 ml) shallots, diced<\/span><br \/>\n<span style=\"font-size: 14pt; color: #000000;\">\u00bc tsp (1.25 ml) fresh lemon zest<\/span><br \/>\n<span style=\"font-size: 14pt; color: #000000;\">1 tbsp (15 ml) fresh dill, minced + more for garnish<\/span><br \/>\n<span style=\"font-size: 14pt; color: #000000;\">Kosher salt and freshly cracked black pepper, to taste<\/span><br \/>\n<span style=\"font-size: 14pt; color: #000000;\">1\/4 cup (60 ml) mayonnaise<\/span><br \/>\n<span style=\"font-size: 14pt; color: #000000;\">2 ripe avocados<\/span><\/p>\n<p><span style=\"font-size: 14pt; color: #000000;\">STEPS<\/span><\/p>\n<p><span style=\"font-size: 14pt; color: #000000;\">1) Place shrimp in a large mixing bowl. Add the diced cherry tomatoes, shallots, dill, and salt and pepper.<\/span><\/p>\n<p><span style=\"font-size: 14pt; color: #000000;\">2) Add the mayonnaise, and stir until the shrimp and vegetables are well-coated.<\/span><\/p>\n<p><span style=\"font-size: 14pt; color: #000000;\">3) Moments before serving, slice the avocado in half, length wise. Scoop out the avocado with a large spoon and place it on the plate.<\/span><\/p>\n<p><span style=\"font-size: 14pt; color: #000000;\">4) Spoon over the shrimp salad into the Avocado and over the sides, it supposed to be a bit messy and rustic.<\/span><\/p>\n<p><span style=\"font-size: 14pt; color: #000000;\">5) Garnish with freshly cracked pepper and more diced dill.<\/span><\/p>\n<p><span style=\"font-size: 14pt; color: #000000;\">6) Serve two avocados as a light dinner or lunch, or it\u2019s great as a first course!
