You’re hit with a video showcasing something called “Poor Man’s Oysters Rockefeller.” Now, I don’t know about you, but my first reaction was something along the lines of, “Wait, what?!” Especially seeing the tin go straight into the air fryer lol but honestly, I don’t like to knock things until I try them….I mean, come on, we’re talking about turning tinned smoked oysters into a knock-off version of one of the fanciest seafood dishes out there. It’s like trying to turn a potato into a prince, but hey, stranger things have happened on the internet, am I right? Anyway, despite my initial suspicion, I couldn’t resist the allure of this viral recipe. I mean, who doesn’t love a good kitchen experiment.

INGREDIENTS
2 cans smoked oysters, drained of oil
1 cup fresh spinach
1 tbsp garlic paste
1/4 cup whipped cream cheese, softened
1/4 cup shredded Italian cheese blend
2 tablespoons butter
1/4 cup panko breadcrumbs
Salt and pepper to taste
Hot sauce to taste
Cajun seasoning to taste
STEPS
1) Prepare the Oysters: Open can and drain oil from the oysters really well and pat dry while keeping the oysters in the tin
2) Prepare the Topping: Steam spinach in microwave for 30 seconds. Then in a mixing bowl, combine the steamed spinach, softened cream cheese, and garlic. Season with salt and pepper to taste. Mix well until all ingredients are evenly incorporated.
3) Assemble the Oysters: Using a spoon or a small knife, carefully mound a generous amount of the spinach and cheese mixture onto each oyster, covering it completely.
4) Assemble the Oysters: Add 1 tbsp of butter to each tin along with some cheese and panko breadcrumbs
5) Bake: Transfer the baking dish to an air fryer and cook for 5 minutes on 450 or until the topping is golden brown and bubbly, and the oysters are heated through.
6) Serve: Once done, remove the Poor Man’s Oysters Rockefeller from the air fryer and let them cool for a few minutes. Serve them warm as a delicious appetizer or snack with your faorite bread or crackers
