Million Dollar Eggs

Baked eggs may seem like a special-day dish, but they’re quite a bit easier than their elegant appearance suggests. These Million Dollar Eggs are stepped up one notch from classic baked eggs, with the addition of bacon, smoky almonds, and scallions, and they still manage to be ready to bake in just minutes.

INGREDIENTS

1 Tbsp. unsalted butter, softened
1/2 cup heavy cream, divided
1/2 cup shredded Cheddar cheese, divided
1/4 cup sliced scallions, plus more to serve
1/4 cup cooked and crumbled bacon (from about 4 slices)
4 tsp. chopped fresh parsley, plus more to serve
8 large eggs, at room temperature
Kosher salt and ground black pepper
1/4 cup chopped smoked almonds, plus more to serve (optional)
Toasted baguette slices, to serve

STEPS

1) Preheat oven to 350°F. Gather all ingredients.

2) Grease 4 8-ounce ramekins with butter.

3) Place 2 tablespoons heavy cream, 2 tablespoons cheese, 1 tablespoon sliced scallions, 1 tablespoon crumbled bacon, and 1 teaspoon parsley in the base of each ramekin.

4) Crack 2 eggs into each ramekin. Make sure the yolks are centered in the dish with space between each. Sprinkle a pinch of salt and black pepper over top.

5) Place ramekins on a sheet tray and bake for 17 to 22 minutes until the whites are just set and the center is still slightly jiggly. (Wide, shallow ramekins will bake faster than taller ramekins.)

6) Carefully transfer each ramekin to a plate. Top with additional sliced scallions, parsley, and chopped almonds, if using. Serve with baguette.
