What You’ll Need:
(2 slices) sourdough or whole grain bread, toasted
(1/2) avocado, sliced or mashed
(1/4 cup) cherry tomatoes, halved
(2 tablespoons) crumbled feta cheese
(2) eggs, scrambled
(1 teaspoon) butter or olive oil for scrambling
(1/2 cup) sliced mushrooms
(1 clove) garlic, minced
(1 tablespoon) olive oil or butter for sautéing
(to taste) salt and black pepper
(—) fresh parsley for garnish

How to Make It:
1. Toast the bread: Toast the sourdough or whole grain slices until golden and crisp.
2. Make the avocado toast: Spread the avocado over one slice of toast. Top with cherry tomatoes and crumbled feta.
3. Scramble the eggs: Whisk the eggs with a pinch of salt. Cook in butter over low heat until soft and creamy.
4. Sauté the mushrooms: In a skillet, heat olive oil or butter. Add mushrooms, garlic, salt, and pepper. Cook until tender and golden.
5. Assemble:
• Toast 1: avocado + tomatoes + feta
