INGREDIENTS
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 cup frozen mixed vegetables (peas, carrots, and corn)
1 tbsp tomato paste
1/2 tsp Worcestershire sauce
1/2 tsp paprika
Salt and pepper to taste
4 medium potatoes, thinly sliced
2 tbsp olive oil
1/2 cup shredded cheddar cheese (optional)
Fresh parsley for garnish (optional)
STEPS
1) Cook the ground beef: In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat, if necessary.
2) Add the vegetables: Add the diced onion and garlic to the skillet and cook for 2-3 minutes until softened. Stir in the mixed vegetables, tomato paste, Worcestershire sauce, paprika, salt, and pepper. Cook for an additional 3-4 minutes until everything is well combined and heated through.
3) Prepare the potato topping: In a separate bowl, toss the sliced potatoes with olive oil, salt, and pepper until evenly coated.
4) Assemble the skillet: Spread the ground beef mixture evenly in the skillet. Layer the seasoned potato slices on top of the beef mixture, overlapping them slightly to create a “potato crust.”
