The history of cheese began accidentally around 8,000 BCE with the domestication of animals, likely when milk was stored in animal stomachs and coagulated due to rennet.

From these beginnings, cheesemaking spread and evolved, with evidence of its practice found in ancient Egypt and Greece. Ancient civilizations like the Romans advanced cheesemaking through aging and smoking, while monasteries in post-Roman Europe became centers for developing new varieties.

The modern era saw the shift from local, farm-based production to large-scale industrialization, beginning with the first cheese factory in Switzerland in 1815.
